Mark Takes Home First Place in Right Some Good Cook-Off!
This weekend, the RightSomeGood Food Festival made it's debut in Halifax. The Festival capped off with an all-day street food fair that closed down Spring Garden Rd. The fair had product stands for local suppliers, a full day of cooking competitions and of course, a full-on street food tent featuring items from both local and international chefs. One of these chefs was our very own, Mark Gray. Mark had chosen to be paired with Micheal Reidt of Miami, FL. Together for the food fair they created a Pork belly hash with leek ash, poached egg, hollandaise, smoked shrimp. Breakfast in hand!
He also competed in the live stage cook-off against chefs from all over HRM. A total of 11 chefs including Mark had to create a dish using the "black box ingredients" which were red perch, haskap berry juice, asparagus, and Benjamin Bridge's Tidal Bay white wine. They each had 45 mins to create 4 plates. Mark plated olive oil poached redfish, leek soubise, crispy quinoa, haskap pickled asparagus, caramelized shallot with a haskap-honey reduction.
At the end of the day the judges decided Mark's dish was the stand out and gave him the top prize of a 500$ gift certificate to Pete's Froutique! Bonus! A huge CONGRATULATIONS goes out to our guy Mark! And also a big cheers to all who competed and helped to put on a very cool event for our city.
