Mark Takes the Win for "Battle of the Chefs"
On a Tuesday night in September; last night to be exact. Our main man, Chef Mark Gray went out to compete in a chef's cook-off to celebrate the grand opening of the Hilton Inn in Halifax. He was up against Culinary Team Canada Chef Peter Dewar. Using a "black box" secret ingredient style format here's what Mark had to say about his dish, " Using scallops, blue cheese, haskap jam, beet greens and quinoa, I made a play on scallops au gratin with blue cheese mornay, seared scallops, beet green and apple salad with haskap vinaigrette with 45 mins of time" and after all the judging was complete our man came out on top as the winner! As a cool bonus to the evening, the event was hosted by two-time olympic gold medalist Catriona Le May Doan! Gold like crazy!
